Recipe: Everyday Chocolate Cake

Everyday Chocolate Cake

1/2 cup (1 stick) of unsalted butter, softened
1 cup brown sugar
1/2 granulated sugar
1 large egg, at room temperature
1 cup buttermilk (substitute: 1 tbsp white distilled vinegar + the rest of 1 cup with fresh milk)
1 tsp vanilla essence
1 1/2 cups of all purpose flour
3/4 cup Dutch cocoa powder
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt


1. Preheat oven at 160 degree of Celsius
2. Butter and lightly flour a tin loaf
3. Cream the butter until smooth
4. Add sugars and beat until fluffy for about 3 minutes
5. Add egg, buttermilk and vanilla essence
6. Sift flour, baking powder, baking soda, cocoa powder and salt and mix together with wet ingredients
7. Stir together until well-blended
8. Pour the batter into loaf pan and bake for 60 - 70 minutes or until the cake tester comes out clean
