Recipe: Chocolate Cake + The best frosting ever!

Mini Chocolate Cake

Recipe adapted from Chocolate Sheet Cake Recipe


2 cups of all-purpose flour
2 cups of sugar
1/4 tsp of salt
4 tbsp (heaping) of cocoa powder
2 sticks of butter
1 cup of boiling water
1/2 cups of buttermilk
2 whole beaten eggs
1 tsp of baking soda
1 tsp of vanilla essence


1. In a mixing bowl, combine flour, sugar & salt.

2. In a saucepan, melt butter. Add cocoa. Stir together.

3. Add boiling water to the butter + cocoa mix. Allow mixture to boil for 30 seconds then turn off heat. 

4. Pour flour mixture and stir lightly to cool.

5. In a measuring cup, pour the buttermilk and add beaten eggs, baking soda & vanilla. Stir buttermilk mixture into butter/ chocolate mixture. 

6. Pour into muffin tin and bake at 177 degrees Celsius for about 10 minutes or until the cake tester is clean.


The Best Frosting Ever!


5 tbsp of flour
1 cup of milk
1 tsp of vanilla essence
1 cup of butter
1 cup of granulated sugar (not powdered sugar!)


1. Bake your favorite chocolate cake and let it cool.

2. In a small saucepan, whisk flour into milk and heat, stirring constantly until it thickens. You want it to be very thick, thicker than cake mix & more like a brownie mix.

3. Remove from heat and let it cool to room temperature. (It must be completely cool before you can move to next step!)

4. Stir in vanilla. And leave it cool some more.

5. Cream the butter & sugar until light & fluffy.

6. Then add the completely cooled milk + flour + vanilla mixture and beat the living daylights out of it. If it looks separated, you haven't beaten it enough! Beat it until it combines & resembles whipped cream.

7. Grab a spoon & taste the wonderful goodness of this frosting!
